Aldon joins from Dallas’ acclaimed Georgie and Le PasSage. A San Diego native, Chef Reyes spent six years at Michelin Bib Gourmand-recognized Juniper & Ivy before relocating to Dallas. A graduate of Le Cordon Bleu with butchering expertise passed down from his father, Aldon brings both technical precision and a dedication to craftsmanship, consistency, and mentorship.
